I am a vegan because of the multiple health benefits (reduced risk of cancer, heart disease, diabetes, and auto-immune diseases) and the environmental benefits (less greenhouse gas emissions and reduced water usage and pollution). I could no longer selfishly force animals to suffer and die just so I could eat them. I want to take the best care of myself that I can. I try to eat pretty healthy, and I love to exercise, although I do love to bake delicious vegan treats. Going vegan in January 2008 forced me to learn how to cook because I could no longer rely on overly processed food. I now have a great collection of cookbooks.
